Ingredients for 4 people (The quantity may seem small, but this mousse is very intense).

  • Juice of 1 orange
  • 100 g dark chocolate (80%)
  • 30 g sweet milk chocolate
  • 2 tsp sugar
  • 1-1,5 tsp green cardamom powder
  • ½ ripe avocado

To serve

  • 1 tbsp shelled pistachios
  • zest of 1 orange
  • Grated milk chocolate

Preparation

  1. First, zest the orange. Then squeeze the orange and put the juice in a saucepan. Heat over low to medium heat.
  2. When the orange juice is simmering, break the chocolate, add it to the pot and let it melt slowly.
  3. Add the sugar and cardamom and stir well.
  4. When the chocolate is completely melted, add the ripe avocado flesh to the saucepan. Using a hand blender, puree to a smooth consistency.
  5. Serve in bowls and garnish with pistachios, orange zest and chocolate shavings.
